I’ve had this conversation with a few athletes and coaches I work with recently: “What are some good breakfast options?” Whether you're training hard or just looking to fuel your day the right way, breakfast is a great opportunity to set the tone for your health and performance. After experimenting with a variety of meals, I’ve landed on three go-to breakfast options I call my “Performance Plates.” These meals are designed to pack in quality carbs, lean proteins, and healthy fats—all essential for keeping energy levels high and muscles fueled for the day ahead. Here’s what’s on my plate right now:
1. Sourdough with Eggs + Egg Whites
This one’s simple and delicious. I love starting my day with a slice of sourdough, topped with eggs and egg whites for a solid protein hit. I’ll add avocado for healthy fats and a bit of jam for some sweetness. If I’ve got leftover veggies from dinner, I’ll throw them into the eggs for extra nutrients. It’s the perfect balance of carbs, protein, and fats to get you going in the morning.
2. Sweet Potatoes with Eggs + Egg Whites & Avocado
Sweet potatoes are a staple in my breakfast routine. I’ll air-fry a batch of sweet potatoes with olive oil and spices, then pair them with eggs, egg whites, and avocado. Not only do sweet potatoes provide quality carbs, but they’re also super satisfying and loaded with nutrients. I make a big batch to keep on hand for both breakfast and lunch throughout the week, so it’s a real time-saver.
3. Oat Bowl with Protein, Fruit, & Peanut Butter
This oat bowl is a game-changer. I cook up some oats, then top them with a scoop of protein powder, frozen fruit (I love the contrast of cold fruit on hot oats!), and a big dollop of peanut butter. The protein boosts recovery, the fruit provides antioxidants, and peanut butter just makes everything taste that much better. It’s a quick, easy, and balanced meal that checks all the boxes for fueling your body right.
